Brewer Description: (from bottle) As local harvest has been non-existent for the last three summers, we looked farther to find the juiciest of peaches. Hence, for this Perzik, we macerated freshly hand-picked yellow peaches from an organic producer in the north of Spain. We only used two- and three-year old lambics for macerating. Maceration took almost five months. The weighted average age of the peach blend upon bottling is almost 24 months. The final proportion of fruit used is 384 grams per litre of Perzik. 100% 3 Fonteinen brewed lambic.

Intro: A 750ml corked and caged bottle, blend°14, season 21/22, bottled on 5th January 2022. Poured into a 3 Fonteinen stemmed glass.
Appearance: A lightly hazy golden orange colour, with a one finger white head that dissipated fairly quickly to a ring around the glass, while leaving only sparse to no lacing.
Aroma: Juicy peach, lemon zest, light wood, and a touch of funk.
Taste: Lightly sour, tart, juicy peach, lime, lemon zest, oak, with some funky notes.
Mouthfeel: Medium bodied with moderate to soft carbonation.
Overall: Really enjoyable with the aroma and flavours full of juicy peaches. Just drinks really easy. Almost as good as the Red Heaven varietal.

3 Fonteinen Perzik Rood

Brewer Description: (from bottle) For this Perzik, we macerated red O’Henry peaches for almost five months in two-, three- and four-year old lambics. And we blended with even more four-year old lambics. This makes the weighted average of the complete blend clock in at almost 34 months upon bottling. The final fruit proportion is 390 grams of fresh peaches per litre of finished Rode Perzik.

Intro: A 750ml corked and caged bottle, blend°20, season 21/22, bottled on 20th January 2022. Poured into a 3 Fonteinen stemmed glass.
Appearance: A lightly hazy golden orange colour with a thin white head that had decent retention, while leaving only sparse lacing.
Aroma: Lightly tart, peach, lemon zest, sweet orange peel, woody, with a touch of funk.
Taste: Lightly tart, sour, stone fruit, ripe peach, orange zest, citrus rind, woody, and funky.
Mouthfeel: Medium bodied with moderate carbonation.
Overall: Very enjoyable with the peach coming through nicely, creating a good balance between the fruit, wood, and funk.

3 Fonteinen Rabarber

Brewer Description: (from bottle) This Rabarber is the result of a six-month barrel maceration of local rhubarb, of which a small part was sourced with a Halle resident but most comes from De Groentelaar, one of our cereal farmers (and also specialized in organic vegetables, fruits, … and rhubarb). We used two different lambikken from two different barrels, equally split between a young lambik for macerating and a two-year old lambik for blending. The final fruit intensity is at 328 grams of rhubarb per litre of rabarber. 100% 3 Fonteinen. Bottle count: 726.

Appearance: A lightly hazy golden orange colour with a very thin white head that dissipated quickly to a ring around the glass, while leaving pretty much no lacing.
Aroma: Tangy, zesty, lemon, earthy, rhubarb, funk, and wood.
Taste: Lightly tart, lemon, citrus zest, stone fruit sweetness, peach, rhubarb, apple peel, woody, funk.
Mouthfeel: Medium bodied with soft carbonation.
Overall: Enjoyable sweet, woody and funky flavours with a nice stone fruit and rhubarb mix.

Brewer Description: (from bottle) Henry Jones Sr. and his son loved to fiddle each evening at dusk; their notes sweetly carried through the wooded acres. Their farm, Jones Peaches, was a southern institution. Many whispered their fiddling coaxed sugars from the earth making them the juiciest peaches known to man. Heaven smiled daily on the Jones’ until tragedy struck, summoning Henry Sr. to his final resting place. Henry Jr. assumed his father’s farming, but the peaches slowly became less sweet. Sales plummeted as bills piled up. One evening a curious banker in an orange suit arrived with an offer… One song, two fiddles – a duel with the land deed in the balance. Neighbors witnessed an evil thrashing and heaven guided harmonics that night. The man in orange left his gilded fiddle on top of the deed, never to be heard from again. Soon the whispers of JP’s greatness returned as Henry Sr. smiled down from above.

Intro: A corked and caged 12.7 fl. oz. bottle, 2017 vintage, poured into a Tilquin stemmed glass.
Appearance: A dark brown colour with pretty much no head and no lacing.
Aroma: Chocolate cake, caramel, toffee, bourbon, dark rum, vanilla, black tea, dark fruit, and peachy notes.
Taste: Chocolate, caramel, bourbon, lightly herbal, black tea, oak, and a lasting bittersweet finish.
Mouthfeel: Full bodied with soft to no carbonation.
Overall: An interesting and enjoyable sipper. The black tea is there and I can even imagine the peaches at times. It makes me wonder if the peaches were more noticeable fresher, and what it would have been like.

Lost Abbey Cuvee de Tomme

Brewer Description: (from bottle) Bourbon & wine barrel-aged wild ale with sour cherries. You are holding in your hands one of the most elusive and sought after small batch beers known simply as Cuvee. Our Cuvee de Tomme is a blend of Old World brewing traditions and New World brewing processes. It is made from our Judgment Day ale, then aged in American bourbon and French oak wine barrels. We add some fantastic wild yeasts and sour cherries to the barrels, creating a secondary fermentation. After one year, our brewers then get together to work out the final blend. This means that each batch of Cuvee will vary slightly between bottlings. Yet, the result will always be a memorable drinking experience.

Intro: A corked and caged 1 pint 9.4 fl. oz. bottle with no clear bottled on or best before date. Poured into a Tilquin stemmed glass.
Appearance: It was a dark brownish red colour, with a thin beige head that dissipated quickly, while leaving only sparse to no lacing.
Aroma: Cherry, vanilla, blackcurrant, oak, graphite, cabernet sauvignon.
Taste: Sour, tart, cherry, blackcurrant, blackberry, vanilla, oak, with light notes of caramel, chocolate and bourbon, and a lightly acidic finish.
Mouthfeel: Medium to full bodied with soft carbonation.
Overall: Complex and enjoyable. Loved the aroma, while the taste was good but perhaps just a touch acidic.
