Brewer Description: (from bottle) For this small batch Bramenlambik, we used blackberries from Ferme Framboos, located in beautiful Huldenberg, Flanders. These blackberries, hand-picked in the summer of 2019, macerated for almost four months on a small foeder. We only used lambik (originating from one brew only) from one barrel for the maceration and no lambik was used for blending. The final fruit intensity is still 645 grams of blackberries per litre of Bramenlambik. 100% 3 Fonteinen.

Intro: A 750ml corked and caged bottle, blend°32, season 19/20, bottled on 28th January 2020. Poured into a 3 Fonteinen stemmed glass.
Appearance: A lightly hazy dark reddish colour with a slight purple tint, and a less than one finger off white head that dissipated fairly quickly to a ring around the glass, while leaving some lacing.
Aroma: Funky, musty, oak, damp wood, blackberry, with notes of lemon zest.
Taste: Sour, tart, blackberry, funky, musty, oak, with light lemon citrus notes.
Mouthfeel: Medium bodied with moderate to soft carbonation.
Overall: A good balance of funk, fruit and oak make it enjoyable and easy to drink.

Brewer Description: (from bottle in Dutch) 3 Fonteinen Aardbei wordt bekomen door de maceratie van handgeplukte aardbeien op jonge traditionele lambik, in een verhouding van één kilo aardbeien per liter traditionele lambik. Daarna wordt de fruitlambik eventueel verder geassembleerd met jonge lambik en wordt alles gebotteld, en zet de vergisting zich verder in de fles. Natuurlijk fruit, zonder toevoeging van sappen, siropen, of suikers. Ongefilterd en ongepasteuriseerd.

Voor deze specifieke Aardbei macereerden we volgens een eindverhouding van 658 gram aardbeien per liter lambik en werd er voor de botteling geen lambik meer aan toegevoegd. De activiteit die nog in de fruitlambik zat, heeft voor een zachte pareling gezorgd. 100% 3 Fonteinen.

Intro: A 750ml corked and caged bottle, blend°97, season 18/19, bottled on 30th July 2019. Poured into a 3 Fonteinen stemmed glass.
Appearance: A lightly hazy pinkish orange colour with a two finger off white head that dissipated fairly quickly to a thin cap, while leaving some nice lacing.
Aroma: Lightly sweet and tangy, strawberry jam, strawberry seed, yoghurt, hay, straw, lemon zest, with a touch of funk.
Taste: Sweet and sour, funky, strawberry, oak, lightly leafy and herbal, with notes of lemon zest.
Mouthfeel: Light to medium bodied with moderate to high carbonation.
Overall: Very nice and enjoyable. The strawberries come through extremely nicely in the aroma, and while the taste wasn’t as strawberry forward, it was still noticeable and well balanced with the other flavours.

Brewer Description: (from bottle in Dutch) 3 Fonteinen Robijn wordt bekomen door het macereren – op een getoast eikenhouten vat – van handgeplukte volle krieken op jonge traditionele lambik gedurende minstens vier maanden, in een verhouding van één kilo per liter. Daarna wordt de kriekenlambik geassembleerd met jonge lambik en wordt alles gebotteld, en zet de vergisting zich verder op fles. Hierdoor ontstaat een complexere Oude Kriek, geraffineerd, en met evolutie in glas en fles. Natuurlijk fruit, zonder toevoeging van sappen, siropen, of suikers. Ongefilterd en ongepasteuriseerd.

Deze specifieke (Oude Kriek) Robijn heeft meer dan 10 maanden gemacereerd. De finale fruitintensiteit bedraagt 695 gram krieken per liter Robijn. 100% 3 Fonteinen afkomstig van drie tonnen en zes brouwsels. 70% van deze assemblage is twee jaar oude lambik.

Appearance: A nice ruby red colour with a one finger pinkish head that dissipated fairly quickly to a ring around the glass, while leaving some lacing.
Aroma: Cherry pie, cherry, almond, marzipan, blood orange, leather, with notes of strawberry juice.
Taste: Lightly sour, tart, cherry, nectarine, cherry skin, oak, with light almond and lemon zesty notes.
Mouthfeel: Medium bodied with light to moderate carbonation.
Overall: Great aroma and flavours make this very enjoyable and easy to drink with so much cherry.

Brewer Description: (from bottle) The Gueuze Cantillon, a real spontaneous fermentation beer, is entirely made up of Lambic. This Lambic is brewed with organically grown wheat (35%) and malted barley (65%), and with dried hops. The Gueuze Cantillon is a sour beer that contains absolutely no sugar. To be drunk preferably within 20 years after the bottling date. Beer with taste evolution.

Intro: A 750ml corked and capped bottle, 20/21 season, bottled on 1st October 2020. Poured into a 3 Fonteinen gueuze glass.
Appearance: A mostly clear golden orange colour with a big two finger white head that had pretty good retention and eventually settled to a thin cap while leaving some nice lacing.
Aroma: Sour, tart, funky, musty, wet wood, green apple, grapefruit zest, with a touch of white grapes.
Taste: Sour, tart, slightly sweet, funky, oak, apricot, with some light lemon zesty notes.
Mouthfeel: Light to medium bodied with moderate carbonation.
Overall: A nice enjoyable easy to drink gueuze. Perfect for a hot summer day.

Appearance: A slightly hazy orange pink colour with a big two finger white head that had pretty good retention while leaving some lacing.
Aroma: Fruity, tart, cherry candy, mixed berries, oak, vinegar, with light citrus zest notes.
Taste: Fruity, tart, a touch sour, gooseberry, cherry, oak, a splash of citrus, and a touch of vinegar.
Mouthfeel: Dry, prickly, medium bodied with moderate carbonation.
Overall: A good mix of fruit creating a fruit punchy like aroma and flavours that was really enjoyable and easy to drink.
