Style: Lambic – Fruit
Other Notes: Blend°97, Season 18/19
100% 3 Fonteinen.
(translated to English) 3 Fonteinen Aardbei is obtained by maceration of hand-picked strawberries on young traditional lambic, at a ratio of one kilo of strawberries per liter of traditional lambic. After that, the fruit lambic is further assembled with young lambic and everything is bottled, and the fermentation continues in the bottle. Natural fruit, without the addition of juices, syrups, or sugars. Unfiltered and unpasteurized.
For this particular Aardbei we macerated according to a final ratio of 658 grams of strawberries per liter of lambic and no more lambic was added before bottling. The activity that was still in the fruit lambik has ensured a soft sparkle. 100% 3 Fonteinen.

Intro: A 750ml corked and caged bottle, blend°97, season 18/19, bottled on 30th July 2019. Poured into a 3 Fonteinen stemmed glass.
Appearance: A lightly hazy pinkish orange colour with a two finger off white head that dissipated fairly quickly to a thin cap, while leaving some nice lacing.
Aroma: Lightly sweet and tangy, strawberry jam, strawberry seed, yoghurt, hay, straw, lemon zest, with a touch of funk.
Taste: Sweet and sour, funky, strawberry, oak, lightly leafy and herbal, with notes of lemon zest.
Mouthfeel: Light to medium bodied with moderate to high carbonation.
Overall: Very nice and enjoyable. The strawberries come through extremely nicely in the aroma, and while the taste wasn’t as strawberry forward, it was still noticeable and well balanced with the other flavours.
