3 Fonteinen Speling van het Lot X.xiv: Druif: Morio Muscat

Brewer Description: (from bottle) For this Druif, we used the Morio Muscat variety, which is a cross between Silvaner and Pinot Blanc (or maybe Muscat Blanc à Petit Grains, but this needs yet to be proven). Originally from the Palatinate region in Germany, this variety’s popularity was peaking in the nineties. Wijndomein Hoenshof was nice enough to harvest some of it for us. We destemmed the grapes in-house and we put the must for almost four months on a gentle young lambik before blending and bottling. Final fruit intensity is 392 grams of grape must per litre of Druif. One third of the lambik that was used was brewed with our own cereals from in and around the Pajottenland. 100% 3 Fonteinen.

Intro: A 750ml corked and caged bottle, blend°14, season 20/21, bottle 237/736, bottled on 11th January 2021. Poured into a 3 Fonteinen stemmed glass.
Appearance: A lightly hazy golden orange colour with a very thin white head that dissipated quickly and left only sparse to no lacing.
Aroma: Bright intense stone fruit, peach, apricot, lemon zest, grapes, vinous, oak, with light funk.
Taste: Sour, tart, stone fruit, peach, apricot, plum, vinous, grapes, lemon, grapefruit, oak, light funk.
Mouthfeel: Medium bodied with close to no carbonation.
Overall: It’s got an excellent aroma, very enticing, but it’s also quite sour, perhaps overly so, and it could do with some carbonation to pick it up.

Brewer Description: (from bottle) This version of our Pruim was made with the Vroege Tolse variety. We harvested these plums on a beautiful July morning in 2020, in the magnificent fruit orchard of a retired teacher, named Willy. His field is situated on the Wijngaardberg, on the border between Gelrode and Rotselaar. We macerated the entire plums (with stone) for almost five months in an oak barrel. We used two-year old lambik for maceration and young lambik for blending. The final fruit intensity is 519 grams of plums per litre. 75% of the lambik is brewed with Pajot cereals. 100% 3 Fonteinen.

Intro: A 750ml corked and caged bottle, blend°2, season 20/21, bottle 528/614, bottled on 14th December 2020. Poured into a 3 Fonteinen stemmed glass.
Appearance: A hazy dark orange colour with a one finger white head, that had decent retention and eventually settled to a ring around the glass, while leaving some nice lacing.
Aroma: Plum skin, lemon zest, funk, oak, with a touch of stone fruit.
Taste: Tart, plum skin, plum flesh, lemon zest, funk, and oak.
Mouthfeel: Medium bodied with soft to moderate carbonation.
Overall: Aromas were a little weak, but flavours were nice and it was just easy drinking.

Brewer Description: (from bottle) … so it was in the summer of 2018, we had the honour of visiting Frederiksdal, the renowned Danish kirsebær orchard and cherry wine maker. Not long after, September 13th 2019, we received a few hundred kilos of their sour cherries and macerated them on a charred oak barrel. We used a gentle 3 Fonteinen lambik from one barrel and two different brew days and macerated the lot for almost seven and a half months. While blending, we added one- and two-year old lambikken from three different barrels and three different brews, and some lambikwort from three different brews. We bottled this on Thursday April 16th 2020. The final fruit intensity is 400 grams of kirsebær per litre of this special version of Kriek. Tak til de venlige mennesker i Frederiksdal! 100% 3 Fonteinen.

Intro: A 750ml corked and caged bottle, blend°63, season 19/20, bottle 1253/1530, bottled on 16th April 2020. Poured into a 3 Fonteinen stemmed glass.
Appearance: It was a clear ruby red colour with a slight purple hue, and a thin pinkish head that dissipated fairly quickly to a ring around the glass while leaving some lacing.
Aroma: Cherry, oak, funk, bandaid, almond notes, with a splash of lemon zest.
Taste: Sour, tart, cherry, funk, oak, vinegar, and lemon.
Mouthfeel: Light to medium bodied with moderate carbonation.
Overall: Great aroma, and a fruit lambic that is enjoyable and easy to drink.

Brewer Description: (from bottle) For this Pruim Speling, we co-macerated two different plum varieties from Wijndomein Hoenshof, Conducta and Opal. We freed up a small 1000L toasted foeder from our friends at Garbellotto, a small family run cooperage. We macerated the plums, with stone and all, for almost five months on two different young lambikken. We bottled the fruit lambik straight from the barrel to the bottle. The final fruit intensity is 769 grams of plums per litre. 100% 3 Fonteinen.

Intro: A 750ml corked and caged bottle, blend°24, season 19/20, bottle 673/969, bottled on 15th January 2020, and with a best before date of 26th October 2040. Poured into a 3 Fonteinen stemmed glass.
Appearance: A hazy golden orange colour with a just under one finger white head that dissipated quickly to a thin cap while leaving only sparse lacing.
Aroma: Plum, plum skin, minerals, with light notes of lemon zest, leather and funk.
Taste: Sour, tart, plum, apricot, lemon, oak, and light funk.
Mouthfeel: Medium bodied with moderate to soft carbonation.
Overall: There was nice plum notes, but the sour intensity and lemon flavours in this Conducta + Opal was higher than other plum varietals I tried recently, and I preferred both Sultana and especially Reine Claude D’Oullins more.

Brewer Description: (from bottle) For the last two summer seasons, unfortunately, peach harvest was almost non-existing with Ludo Rosseels, the last peach grower of importance in Belgium. Luckily, he also has some plum trees that we are fortunate to be able to harvest from. Last summer, we were able to harvest about 250 kilos of Sultana plums from his fields.

We macerated these on an ex-Bordeaux barrel with young lambik for five and a half months. We blended with some jonge lambik prior to bottling. This way, we used lambikken from four different barrels and four different brews. The final fruit intensity is at 500 grams of plums per litre. 100% 3 Fonteinen.

Intro: A 750ml corked and caged bottle, blend°21, season 19/20, bottle 084/684, bottled on 13th January 2020, and with a best before date of 26th October 2040. Poured into a 3 Fonteinen stemmed glass.
Appearance: A very lightly hazy golden orange colour, with a two finger white head that had decent retention and eventually settled to a nice thin fluffy cap, while leaving some lacing.
Aroma: Light plum, plum skin, funky, with some herbal earthy notes.
Taste: Lightly sour, lightly tart, plum, plum skin, dried apricot, funky, leather, oak, earthy.
Mouthfeel: Dry, medium bodied with moderate to soft carbonation.
Overall: Balanced and enjoyable with the plums coming through nicely with the funk.
