Brewer Description: (from bottle in Dutch) 3 Fonteinen Robijn wordt bekomen door het macereren – op een getoast eikenhouten vat – van handgeplukte volle krieken op jonge traditionele lambik gedurende minstens vier maanden, in een verhouding van één kilo per liter. Daarna wordt de kriekenlambik geassembleerd met jonge lambik en wordt alles gebotteld, en zet de vergisting zich verder op fles. Hierdoor ontstaat een complexere Oude Kriek, geraffineerd, en met evolutie in glas en fles. Natuurlijk fruit, zonder toevoeging van sappen, siropen, of suikers. Ongefilterd en ongepasteuriseerd.

Deze specifieke (Oude Kriek) Robijn heeft meer dan 10 maanden gemacereerd. De finale fruitintensiteit bedraagt 695 gram krieken per liter Robijn. 100% 3 Fonteinen afkomstig van drie tonnen en zes brouwsels. 70% van deze assemblage is twee jaar oude lambik.

(translated to English) 3 Fonteinen Robijn is obtained by macerating – in a toasted oak barrel – hand-picked full cherries on young traditional lambic for at least four months, at a ratio of one kilo per litre. Then the cherry lambic is assembled with young lambic and everything is bottled, and the fermentation continues in the bottle. This creates a more complex Oude Kriek, refined, and with evolution in glass and bottle. Natural fruit, without the addition of juices, syrups, or sugars. Unfiltered and unpasteurized.

This particular (Oude Kriek) Robijn has macerated for over 10 months. The final fruit intensity is 695 grams of cherries per liter of Robijn. 100% 3 Fonteinen from three barrels and six brews. 70% of this assembly is two year old lambic.

Intro: A 750ml corked and caged bottle, blend°104, season 18/19, bottled on 28th August 2019. Poured into a 3 Fonteinen stemmed glass.
Appearance: A nice ruby red colour with a one finger pinkish head that dissipated fairly quickly to a ring around the glass, while leaving some lacing.
Aroma: Cherry pie, cherry, almond, marzipan, blood orange, leather, with notes of strawberry juice.
Taste: Lightly sour, tart, cherry, nectarine, cherry skin, oak, with light almond and lemon zesty notes.
Mouthfeel: Medium bodied with light to moderate carbonation.
Overall: Great aroma and flavours make this very enjoyable and easy to drink with so much cherry.

3 Fonteinen Druif/Kriek Dornfelder

Brewer Description: (from bottle) For this Druif/Kriek, we blended a Belgian dornfelder druivenlambik and a kriekenlambik in a 50/50 proportion. We used both young and two-year old lambikken, originating from nine different barrels and nine different brews. The combined maceration took eight months and the final fruit intensity is 510 grams per litre of sour cherries and freshly pressed, skin-macerated grape juice.

3 Fonteinen Druif/Kriek is obtained by the successive maceration of grapes and cherries on lambik. Natural fruit, without the addition of syrups, or sugars. Unfiltered and unpasteurized.

Intro: A 750ml corked and caged bottle, blend°26, season 20/21, bottled on 10th February 2021. Poured into a 3 Fonteinen stemmed glass.
Appearance: A dark maroon purple colour with a nice one finger pinkish head that had decent retention and eventually settled to a thin but frothy cap, while leaving some nice lacing.
Aroma: Tart, cherry, blackberry, marzipan, with light citrus zesty notes.
Taste: Sour, tart, cherry, blackberry, grape skin, vinous, oak, with a touch of funk.
Mouthfeel: Medium bodied with soft to moderate carbonation.
Overall: This Druif/Kriek blend worked really well and was super enjoyable. Despite the 50/50 blend, I got all cherry and no grape in the aroma, but the grape and vinous character did come out nicely in the flavour, and matched well with the cherries.

3 Fonteinen Blauwe Bosbes

Brewer Description: (from bottle) Mid September 2018, we received 500 kilos of wild blueberries, foraged in the Swedish forests. For this blend, we let 250 kilos macerate for 5 months and 5 days on 210 litres of young traditional 3 Fonteinen lambic and in an oak barrel. The berry lambic was then blended with young lambic and a bit of fresh lambic wort for a continued fermentation in the bottle. Natural fruit without addition of juices, sirops or sugars. Unfiltered and unpasteurised.

The final fruit intensity is 351 grams of blueberries per litre of Blauwe Bosbes lambik. 100% 3 Fonteinen. # of bottles: 934.

Intro: A 750ml corked and caged bottle, blend°45, season 18/19, bottled on 25th February 2019. Poured into a 3 Fonteinen stemmed glass.
Appearance: A reddish purple colour with a two finger pinkish head that had excellent retention and left nice lacing.
Aroma: Funky, barnyard, blueberry, leather, bandaid, wood, and a touch herbal.
Taste: Tart, blueberry, funky, barnyard, blueberry skin, cherry, grass, oak and a splash of lemon.
Mouthfeel: Creamy, medium bodied, with moderate carbonation.
Overall: This was nice and enjoyable. I got some bandaid in the aroma, more so when it was cold, but it wasn’t over the top. While the flavour had a nice balance between the blueberries, funk and oak.

3 Fonteinen Speling van het Lot XVI.iii: Oude Kirsebær

Brewer Description: (from bottle) … so it was in the summer of 2018, we had the honour of visiting Frederiksdal, the renowned Danish kirsebær orchard and cherry wine maker. Not long after, September 13th 2019, we received a few hundred kilos of their sour cherries and macerated them on a charred oak barrel. We used a gentle 3 Fonteinen lambik from one barrel and two different brew days and macerated the lot for almost seven and a half months. While blending, we added one- and two-year old lambikken from three different barrels and three different brews, and some lambikwort from three different brews. We bottled this on Thursday April 16th 2020. The final fruit intensity is 400 grams of kirsebær per litre of this special version of Kriek. Tak til de venlige mennesker i Frederiksdal! 100% 3 Fonteinen.

Intro: A 750ml corked and caged bottle, blend°63, season 19/20, bottle 1253/1530, bottled on 16th April 2020. Poured into a 3 Fonteinen stemmed glass.
Appearance: It was a clear ruby red colour with a slight purple hue, and a thin pinkish head that dissipated fairly quickly to a ring around the glass while leaving some lacing.
Aroma: Cherry, oak, funk, bandaid, almond notes, with a splash of lemon zest.
Taste: Sour, tart, cherry, funk, oak, vinegar, and lemon.
Mouthfeel: Light to medium bodied with moderate carbonation.
Overall: Great aroma, and a fruit lambic that is enjoyable and easy to drink.

3 Fonteinen Oude Geuze Golden Blend Honing

Brewer Description: (from bottle in Dutch) 3 Fonteinen Oude Geuze Golden Blend is een assemblage van één-, twee-, drie- en vierjarige traditionele lambikken, verder vergist in de fles en waarvan de vierjarige lambik minstens 25% deel uitmaakt. Dankzij de oude lambik en de continue evolutie in de fles ontstaat een uitgesproken complex en elegant natuurlijk bier. Lambik en Geuze zijn rijk en levend erfgoed, eigen aan de Zennevallei! Ongefilterd en ongepasteuriseerd.

Deze specifieke Golden Blend heeft een proportie van 27% vier jaar oude lambiken werd gebrouwen in januari 2013. Bij het assembleren werd er ook wat honing toegevoegd.

(translated to English) 3 Fonteinen Oude Geuze Golden Blend is a blend of one-, two-, three- and four-year-old traditional lambic, further fermented in the bottle, of which at least 25% is four-year-old lambic(s). Thanks to the old lambic and the continuous evolution in the bottle, a distinctly complex and elegant natural beer is created. Lambik and Geuze are a rich living heritage, characteristic of the Senne valley! Unfiltered and unpasteurized.

This particular Golden Blend has a proportion of 27% four-year-old lambic that was brewed in January 2013. Some honey was also added during assembly.

Intro: A 750ml corked and caged bottle, blend°51, season 16/17, bottled on 27th September 2017. Served from a 3 Fonteinen lambic basket, and poured into a 3 Fonteinen gueuze glass.
Appearance: A nice clear golden orange colour with a one finger white head that had decent retention while leaving some nice lacing.
Aroma: Green apple, rhubarb, funk, slight cheese, wet wood, lemon, with a hint of honey.
Taste: Tart, light sour, apple, gooseberry, lemon zest, lime, earthy, damp wood, light funk, with an apple peel finish.
Mouthfeel: Medium bodied, with soft to moderate carbonation.
Overall: It was nice and enjoyable, but other than just slightly from the aroma, I do not get any honey directly from the flavour. In the end while it was good, I don’t think it improved on the original Golden Blend, which I thought was amazing.
