Brewer Description: (from bottle) A blended, coolshipped spontaneously fermented beer, aged in oak barrels for one, two, and three years, married with locally grown organic rhubarb and Reine Claude plums. A harmonious and delicate expression of the local landscape and its passage through the seasons, captured in a bottle. Best enjoyed in good company! Na zdravi!

Intro: A 750ml corked and capped bottle, with a best before date of 10th January 2034. Poured into a Tilquin stemmed glass.
Appearance: A slightly hazy golden straw yellow colour with a one finger white head that had good retention while leaving only sparse lacing.
Aroma: Lightly tart, earthy, rhubarb, yellow stone fruit, plums, wood, with light funky notes.
Taste: Much like the aroma, lightly sour and tart, earthy, rhubarb, plum, wood, funk.
Mouthfeel: Light to medium bodied with moderate to soft carbonation.
Overall: Good easy drinking as the earthy rhubarb goes well with the plums, and overall not too sour or acidic.

Brewer Description: (from bottle) #2023/003 Barrel aged Lambiek + Lijsternest pomace: rondo, muscat blue, solaris, bronner.

Intro: A 750ml corked and capped bottle. Bottled in March 2023. Poured into a Tilquin stemmed glass.
Appearance: A hazy pinkish orange colour with a half finger white head that had dissipated fairly quickly, while leaving only sparse lacing.
Aroma: Vinous, red berries, apple peel, tart, funky.
Taste: Sour, tart, red berry fruits, apple peel, lightly vinous, lemon zest, viney.
Mouthfeel: Medium bodied, moderate to low carbonation, with moderate to high acidity.
Overall: On the edge of being too acidic, and while being fruity, it wasn’t as vinous or grapey than expected.

Bofkont Hannibal Lecter

Brewer Description: Blend of 1, 2 and 3 years old lambic with Cabernet Franc grapes and Dornfelder grapes. This is the barrel aged version of our silence of the lam(bic) blend we made in 2020.

Intro: A 750ml corked and capped bottle, 2020 vintage, bottled in 21st July 2023. Poured into a Tilquin stemmed glass.
Appearance: A very nice dark ruby red colour with a purple tint, and a one finger pinkish head that dissipated quite quickly while leaving only sparse to no lacing.
Aroma: Red wine grapes, vinous, grape skin, blackberry, light oak, with a touch of funk.
Taste: Sour, red wine vinous, grape skin, oak, with some light funk.
Mouthfeel: Medium bodied with moderate carbonation.
Overall: Very enjoyable vinous wine like character with an especially great aroma and good flavours.

Bofkont Lazy Red Amber

Brewer Description: (from bottle) 1, 2 and 3 years old lambic with a small variety of Spanish plums. In 2022 we tasted a small beautiful plum from Spain, the parfume and taste was heaven on earth. Unfortunately the season had just ended, so we had to wait for the 2023 harvest.

Intro: A 750ml corked and capped bottle, 2023 vintage, bottled in November 2023. Poured into a Tilquin stemmed glass.
Appearance: A hazy grapefruit like dark pinkish orange colour, with a big two finger slightly pinkish head that had great retention, eventually settling to a nice fluffy cap while leaving some nice lacing.
Aroma: Strong stone fruit, lots of plums, plum skin, apricot, spritzy, lemon zest, wood, vanilla, and funk.
Taste: Sour, tart, plum, plum skin, with light woody and funky notes.
Mouthfeel: Medium bodied with good balanced acidity and spritzy moderate carbonation.
Overall: Very enjoyable and easy drinking with an amazing aroma and great flavours. The acidity is there but it was still balanced, and each sip just left me wanting the next one.

Intro: A 750ml corked and capped bottle, 2023 vintage, bottled on 6th July 2023. Poured into a Tilquin stemmed glass.
Appearance: A hazy orange colour with a one finger white head that had good retention, and left some nice lacing.
Aroma: Rhubarb, green apple, earthy, funk, oak, lemon zest.
Taste: Soft tartness, rhubarb, green apple, minerals, light oak, with a splash of lemon zest.
Mouthfeel: Light to medium bodied with soft to moderate carbonation.
Overall: The rhubarb might not be as strong as in other rhubarb lambics, but the there is enough to have a nice balance with the minerality and acidity. Easy drinking and enjoyable.
