Brewer Description: (from bottle) Imperial sour blonde ale aged in oak barrels.

Intro: A 750ml bottle, 2017 vintage, poured into a Tilquin stemmed glass.
Appearance: A cloudy dark orange colour with a one finger white head that had pretty good retention, and left some nice lacing.
Aroma: Funky, brett, lime juice, green apple, white wine grapes, cucumber, oak, damp wood, hay, vanilla.
Taste: Lightly sour, light funk, lime juice, lemon, white wine grapes, oak, with light notes of yellow stone fruits and apple cider vinegar.
Mouthfeel: Medium bodied with light to moderate carbonation.
Overall: Aroma and flavours were quite different from each other, but it was enjoyable to drink. Was hoping for more of the funk to infiltrate into the flavour though.

Brewer Description: (from bottle) A spontaneous Wild Ale with Cider apples aged in oak barrels for four years. Made with our friends at Baird & Dewar.

Intro: A 1 pint 9.4 fl. oz. corked and capped bottle, bottled in April 2021. Poured into a Tilquin stemmed glass.
Appearance: A nice clear golden colour with a one finger white head that dissipated fairly quickly to a ring around the glass, while leaving some lacing.
Aroma: Tart, funk, apple peel, green apple, apple cider.
Taste: Tart, sour, apple peel, apple cider, lemon juice, with light oak and pineapple notes.
Mouthfeel: Light to medium bodied with moderate carbonation.
Overall: The aroma was what I was expecting, but the taste didn’t quite reflect in the same way. I thought the lemony sourness overpowered the cider a bit and the nice funkiness that I got in the aroma wasn’t very noticeable.

Intro: A 1 pint 9.4 fl. oz. corked and capped bottle, bottled in March 2021. Poured into a Tilquin stemmed glass.
Appearance: A very nice clear golden colour with a one finger white head that dissipated fairly quickly to a ring around the glass, while leaving some lacing.
Aroma: Light tartness, sweet Riesling, with notes of pear, honey, and oak.
Taste: Lightly sour and tart, Riesling grapes, pear, green apple, oak, and a touch of lemon zest.
Mouthfeel: Light to medium bodied with high carbonation (overly so).
Overall: The look and aroma was great, and the taste was nice, but the over carbonation did affect the experience as it was a touch uncomfortable on the palate. I would love to try this again with less carbonation.

Other Notes: Mills Brewing make beer with minimal modern intervention, relying on local wild yeast cultures and the influence of nature to ferment

Brewer Description: (from bottle) Vienna is a single barrel bottling made from one brew in May 2019. We made a turbid wort with Vienna malt, rye and raw barley. Solevian hops, both aged and fresh, were added during the boil. Fermentation and maturation took place in a well travelled 500 litre butt which was previously used for sherry, Scotch whisky and Herefordshire cider. The beer was bottled after 30 months in barrel, then conditioned slowly over winter.

Intro: A 750ml corked and capped bottle, bottled in November 2021, with a best before date of November 2031. Poured into a 3 Fonteinen stemmed glass.
Appearance: A clear golden colour with a two finger white head that had good retention and eventually settled to a thin cap while leaving nice lacing.
Aroma: Funky, sweet apple, lemon zest, oak.
Taste: Tart, light to moderate sour, lemon, apple, funk, oak.
Mouthfeel: Light bodied with moderate spritzy carbonation.
Overall: Light, balanced, refreshing, with enjoyable aroma and flavours.

Mills Chuckleberry

Other Notes: Mills Brewing make beer with minimal modern intervention, relying on local wild yeast cultures and the influence of nature to ferment

Brewer Description: (from bottle) This beer is a blend of two brews produced in June and September 2019. They were made from a turbid wort, using rye malt and aged hops. Fermentation and maturation took place in red Bordeaux barrels. The resulting blend was added to a large quantity of locally grown chuckleberries to referment for five months. The beer then conditioned in bottle for a further three months before release.

Intro: A 750ml corked and capped bottle, bottled in November 2021, with a best before date of November 2026. Poured into a 3 Fonteinen stemmed glass.
Appearance: A very nice reddish dark magenta colour with a two finger pinkish head that had decent retention while eventually settling to a ring around the glass and leaving some lacing.
Aroma: Tart, gooseberry, redcurrant, red wine grapes, funk, wood, and a splash of blackcurrant.
Taste: What you’d expect from the aroma, tart, light to moderate sour, gooseberry, redcurrant, funk, earthy, wood, and blackcurrant notes.
Mouthfeel: Medium bodied with moderate carbonation.
Overall: Balanced and easy drinking, and my first time trying something with chuckleberry in it.
