3 Fonteinen Speling van het Lot XI.viii: Pruim: Vroege Tolse

Brewer Description: (from bottle) This version of our Pruim was made with the Vroege Tolse variety. We harvested these plums on a beautiful July morning in 2020, in the magnificent fruit orchard of a retired teacher, named Willy. His field is situated on the Wijngaardberg, on the border between Gelrode and Rotselaar. We macerated the entire plums (with stone) for almost five months in an oak barrel. We used two-year old lambik for maceration and young lambik for blending. The final fruit intensity is 519 grams of plums per litre. 75% of the lambik is brewed with Pajot cereals. 100% 3 Fonteinen.

Intro: A 750ml corked and caged bottle, blend°2, season 20/21, bottle 528/614, bottled on 14th December 2020. Poured into a 3 Fonteinen stemmed glass.
Appearance: A hazy dark orange colour with a one finger white head, that had decent retention and eventually settled to a ring around the glass, while leaving some nice lacing.
Aroma: Plum skin, lemon zest, funk, oak, with a touch of stone fruit.
Taste: Tart, plum skin, plum flesh, lemon zest, funk, and oak.
Mouthfeel: Medium bodied with soft to moderate carbonation.
Overall: Aromas were a little weak, but flavours were nice and it was just easy drinking.

3 Fonteinen Druivenlambik Muscat Bleu

Brewer Description: (from bottle) For this Druivenlambik, we used Muscat Bleu grapes from Wijndomein Hoenshof in Hoepertingen, Haspengouw region, Flanders. Muscat Bleu is a hybrid wine and table grape and has its origins in Switzerland. We macerated the grape must with two different lambikken from the same barrel. We let it macerate for over five months on a small oak barrel and bottled it straight from the barrel. The final fruit intensity is 42.9% of grape must per litre of Druivenlambik Muscat Bleu. This Druivenlambik is one of three small batch macerations with must from the same grape on the same type and size of barrel but with different maceration ratios. 100% 3 Fonteinen – bottle count 544.

Intro: A 750ml corked and caged bottle, blend°55, season 19/20, bottled on 2nd March 2020. Poured into a 3 Fonteinen stemmed glass.
Appearance: A very nice lightly hazy ruby red colour, with a very thin white head that dissipated quickly while leaving only sparse to no lacing.
Aroma: Grape skin, light funk, leather, peach gummy candy, oak, lemon peel, and a touch vinous.
Taste: Tart, lightly funky, grape skin, lemon peel, oak, lightly vinous.
Mouthfeel: Light to medium bodied with soft carbonation.
Overall: I don’t usually like such low carbonation in beers, but this works well, maybe due to it’s vinous nature. The aroma and flavours were also balanced between fruit and funk, and were just what my palate enjoys.

3 Fonteinen Cuvée Miel

Brewer Description: (from bottle) This Cuvée Miel is a special version of the Cuvée Armand & Gaston. This geuze is a blend of one-, two-, three- and four-year old lambikken that have been infused with honey on the coolship. While blending, we added some more local honey. The weighted average age of this blend upon bottling was more than 24 months. 100% 3 Fonteinen brewed lambik.

Intro: A 750ml corked and caged bottle, blend°67, season 20/21, bottled on 28th July 2021. Poured into a 3 Fonteinen gueuze glass.
Appearance: A very nice clear dark golden orange colour, with a one finger white head that dissipated fairly quickly to a thin cap, while leaving lots of nice lacing.
Aroma: Funky, dusty, hay, stone fruit, peach, apricot, orange zest, green apple, with notes of honey.
Taste: Lightly tart, funky, barnyard, damp wood, hay, green apple, citrusy, orange zest, lemon, with light herbal, honey, and stone fruit notes.
Mouthfeel: Medium bodied with moderate to high carbonation.
Overall: Another interesting and enjoyable variant of Cuvée Armand & Gaston that drinks really easy and one that I could just drink again and again.

Brewer Description: (from bottle in Dutch) 3 Fonteinen Braambes wordt bekomen door de maceratie van handgeplukte braambessen op jonge traditionele lambik, gedurende minstens vier maanden, in een verhouding van één kilo bramen per liter traditionele lambik. Daarna wordt de fruitlambik geassembleerd met jonge lambik en wordt alles gebotteld, en zet de vergisting zich verder in de fles. Het resultaat is een bijzonder braambessenlambikbier, met een intens bosvruchtenboeket en met evolutie in het glas. Natuurlijk fruit, zonder toevoeging van sappen, siropen, of suikers. Ongefilterd en ongepasteuriseerd.

Deze specifieke Braambes heeft 4,5 maanden gemacereerd op haar fruit. De finale fruitintensiteit bedraagt 426 gram fruit per liter Braambes. De lambikken zijn afkomstig uit vier vaten en van vier brouwsels. 75% 3 Fonteinen en 25% lambik gebrouwen door Brouwerij Lindemans.

(translated to English) 3 Fonteinen Braambes is obtained by maceration of handpicked blackberries on young traditional lambic, for at least four months, at a ratio of one kilo of blackberries per liter of traditional lambic. Then the fruit lambic is assembled with young lambic and everything is bottled, and the fermentation continues in the bottle. The result is a special blackberry lambic beer, with an intense forest fruit bouquet and with evolution in the glass. Natural fruit, without the addition of juices, syrups, or sugars. Unfiltered and unpasteurized.

This particular Braambes has macerated on its fruit for 4.5 months. The final fruit intensity is 426 grams of fruit per liter of Blackberry. The lambics come from four barrels and four brews. 75% 3 Fonteinen and 25% lambic brewed by Lindemans Brewery.

Intro: A 750ml corked and caged bottle, blend°38, season 18/19, bottled on 12th February 2019. Poured into a 3 Fonteinen stemmed glass.
Appearance: A slightly hazy maroon red copper colour with a one and a half finger tanned head that dissipated fairly quickly to a ring around the glass, while leaving some lacing.
Aroma: Funky, dusty, blackberry, jammy, oak, vanilla, with a touch of lime zest.
Taste: Sour, tart, funky, lime, blackberry, dusty, musty, oak, and gooseberry like notes.
Mouthfeel: Light to medium bodied with soft carbonation.
Overall: Not my favourite blackberry lambic that I’ve tried, and even among 3F, I preferred Bramenlambik, but this was still nice and enjoyable.

3 Fonteinen Bramenlambik

Brewer Description: (from bottle) For this small batch Bramenlambik, we used blackberries from Ferme Framboos, located in beautiful Huldenberg, Flanders. These blackberries, hand-picked in the summer of 2019, macerated for almost four months on a small foeder. We only used lambik (originating from one brew only) from one barrel for the maceration and no lambik was used for blending. The final fruit intensity is still 645 grams of blackberries per litre of Bramenlambik. 100% 3 Fonteinen.

Intro: A 750ml corked and caged bottle, blend°32, season 19/20, bottled on 28th January 2020. Poured into a 3 Fonteinen stemmed glass.
Appearance: A lightly hazy dark reddish colour with a slight purple tint, and a less than one finger off white head that dissipated fairly quickly to a ring around the glass, while leaving some lacing.
Aroma: Funky, musty, oak, damp wood, blackberry, with notes of lemon zest.
Taste: Sour, tart, blackberry, funky, musty, oak, with light lemon citrus notes.
Mouthfeel: Medium bodied with moderate to soft carbonation.
Overall: A good balance of funk, fruit and oak make it enjoyable and easy to drink.
