Brewer Description: (from Untappd) This imperial stout matured for 23 months in 10 year old Basil Hayden bourbon barrels. It exudes a complex tapestry of flavors. Expect a deep, mahogany-hued liquid, with a soft bourbon warmth, accompanied by notes of vanilla, oak, and chocolate bonbons. These barrels were super elegant! Our prolonged aging process imparts a smooth and velvety texture, enhancing the overall complexity. Sip and savor!!

Intro: A 500ml bottle with no clear bottled on or best before date, although the barrels were emptied on 12th December 2023. Poured into a snifter glass.
Appearance: It poured a smooth, thick, oily, black colour with pretty much no head and no lacing.
Aroma: Roasted malts, sweet, boozy, bourbon, chocolate, molasses, vanilla, oak, with notes of dark fruit.
Taste: Sweet, bourbon, chocolate, vanilla, oak, light roast, with a touch of dark fruit.
Mouthfeel: Smooth, full bodied, with soft carbonation.
Overall: A very enjoyable sipper with great flavours that drinks just really smooth.

Intro: A 750ml bottle, 2020 vintage. Poured into a 3 Fonteinen stemmed glass.
Appearance: A lightly hazy golden colour with a one finger white head that dissipated fairly quickly while leaving only sparse lacing.
Aroma: Dessert like, very light tartness, strong graham cracker, shredded coconut, caramel, with light notes of vanilla, honey, marshmallow, and candied lime.
Taste: Liquid dessert or cocktail, moderately sweet, lightly tart, tequila, candied lime, marshmallow, graham cracker, shredded coconut.
Mouthfeel: Medium bodied with moderate carbonation.
Overall: Pleasantly surprised and really unexpected in a good way. I suppose the reason is that I had no idea what to expect even after reading the description. But this really worked, and everything from the description just seemed to meld together, and it’s like drinking a liquid dessert. At 12% ABV, any alcohol is really well hidden, and perhaps my only negative, is that after drinking half a bottle, it does start to feel quite sweet, so share the bottle and enjoy!

Intro: A 1 pint can, canned on 13th October 2020, ‘dazed & confused’. Poured into a 3 Fonteinen stemmed glass.
Appearance: A hazy beetroot purple colour with a one finger pinkish purple head that had decent retention, but left only sparse lacing.
Aroma: Sweet, candied, raspberry, mixed berries.
Taste: Slightly tart, sweet, jammy, candied, raspberry, mixed berries.
Mouthfeel: Creamy, medium bodied with moderate to soft carbonation.
Overall: Aroma and flavours were nice with lots of raspberry, but it was just a bit too sweet for me. Would have preferred more sour and tartness to balance out the sweetness.

Intro: A 1 pint can, canned on 13th October 2020, ‘bling bling’. Poured into a 3 Fonteinen stemmed glass.
Appearance: A cloudy pinkish orange colour with a one finger pinkish head that had decent retention, while leaving some lacing and (I’m guessing) strawberry pulp.
Aroma: Sweet, strawberry, jammy, cucumber.
Taste: Moderately sweet, slightly tart, strawberry, jam, light saltiness.
Mouthfeel: Medium bodied with moderate to soft carbonation.
Overall: I loved both the aroma and flavour as it’s very strawberry and drinks real easy. In fact it’s probably the best strawberry ‘beer’ I’ve tried, since most are pretty poor. But is it beer? As it seems much closer to fresh squeezed juice or a smoothie than a beer.

Brewer Description: (from website) This Three Sons × Omnipollo collaborative maple bomb has spent 1 year on Woodford Reserve bourbon barrels, and is one of our sickest, and thickest (!), beers to date. Serving alongside actual pancake stack is optional, but highly recommended.

Intro: A 330ml bottle with a best before date of 2nd February 2021. Poured into a snifter glass.
Appearance: Black in colour with a thin mocha brown head that dissipated quickly and left only sparse to no lacing.
Aroma: From afar, I got pancakes and maple syrup. Closer up I got light roast, sweet maple, chocolate, caramel, bourbon and maybe a touch of toffee.
Taste: Sweet, very sweet, too sweet for me. Maple syrup, caramel, chocolate, bourbon.
Mouthfeel: Sticky, full bodied with soft carbonation.
Overall: The maple filled aroma was great, but the sweetness in the taste was way overdone. Normally sipping Imperial Stouts became quarter sipping as it was just way too much. And at times I even had to eat something like bread just to balance out the sweetness. It took a long time for me to finish this one, and it wasn’t enjoyable the whole way.
