(translated to English) This vintage comes from the perpetual blending of all the vintages since the birth of the brewery. Developed according to the Solera practice, it is the imprint of time. Spontaneous fermentation beer, aged in ex-Burgundy wine barrels.

Intro: A 750ml corked and capped bottle, bottled on 8th October 2021, poured into a Tilquin stemmed glass.
Appearance: It was a lightly cloudy pale straw blonde colour with a thin white head that dissipated quickly to nothing, while leaving no lacing.
Aroma: Tart, green vines, dill pickles, pickled cucumber, microgreens, unripe guava, with a splash of lemon.
Taste: Sour, tart, lemonade, microgreens, pickled cucumber, lemon juice, with light vinous notes.
Mouthfeel: Light to medium bodied with soft to moderate carbonation.
Overall: A strange one for me, overly green, and the aroma and flavours just didn’t come together well for me. I love pickles and pickled vegetables, but that did not work in beer.

Ammonite Vinifera XI – Gewurztraminer

Brewer Description: (from Untappd) Spontaneous fermented beer aged 1 year in pinot noir cask transferred in “Vinification intégrale” cask. Maceration of 7 months with “Gewurztraminer” grapes from Henri Klee Domaine. Concentration 300g/L.

Intro: A 750ml corked and capped bottle, 2021 vintage, poured into a Tilquin stemmed glass.
Appearance: A nice lightly hazy golden straw orange colour with a half finger white head that dissipated fairly quickly while leaving only sparse lacing.
Aroma: Tart, vinous, white wine grapes, yellow stone fruit, apricot seed, funk, oak, lime, and citrus zest.
Taste: Lightly sour, herbal, green vines, vinous, white wine grapes, grapefruit, lime, with a touch of funk and wood.
Mouthfeel: Light to medium bodied with moderate to soft carbonation.
Overall: It took some time for me to enjoy this, but it grew on me with each sip. I think it was the herbal element that caught me out a bit.

Ammonite Cuvée Vendange Cassis 2022

Intro: A 750ml corked and capped bottle, vintage 2022, with a best before date of 2nd October 2042. Poured into a Tilquin stemmed glass.
Appearance: A lightly hazy purplish red colour, with a thin white head that dissipated quickly and left only sparse to no lacing.
Aroma: Fruity, blackcurrant, Ribena, green vines, with a touch of apple peel.
Taste: Much like the aroma, sour, tart, fruity, blackcurrant, Ribena, notes of apple peel and a touch of acidity.
Mouthfeel: Medium bodied with soft to no carbonation.
Overall: Cassis is front and centre as it should be. Was hoping for more complexity though, and my preference would have been to have at least some carbonation.
