Brewer Description: (from bottle) Brouwerij 3 Fonteinen “Speling van het Lot” (Twist of Fate) is a series of small batch experimental brews, barrel maturations, fruit macerations and/or blends. This 7th version features a range of fruit macerations on freshly emptied Bordeaux barrels from Château Pabus. These high quality French oak barrels were used for a unique integrated vinification technique, including grape peel maceration in the barrel itself. The name (“Zotte Kadeeën” – “Crazy Kids”) refers to the abundant creativity of our youthful, passionate team, that likes to explore within the traditional lambic boundaries. Intro: A 750ml corked and caged bottle at 3 Fonteinen lambik-O-droom, blend n°88, season 17/18, bottled on 19th October 2018, with a best before date of 26th October 2038. Poured into a 3 Fonteinen ballon glass.
Appearance: A very nice clear dark ruby purple red colour with a one finger pinkish head that dissipated fairly quickly while leaving some spotty lacing.
Aroma: Tart, sweet, black cherry and light oak.
Taste: Sweet and sour, black cherry, dark grape, oak and hints of blackcurrant.
Mouthfeel: Medium to light bodied with moderate carbonation.
Overall: Excellent flavours. I’m loving these sweet black cherries. This was one of my favourites over the 3 days spent at lambik-O-droom, and on the last day, we even went for a second bottle.

Other Notes: This fruit lambic is a blend of 90% blackberry lambic and 10% Hommage lambic (75% raspberries and 25% sour cherries). After the maceration, the fruit lambic has been bottled immediately, without blending it with young lambic. The total fruit intensity is 65%, i.e. 650 grams of fruit per liter of bottled fruit lambic. Number of bottles – 588

Intro: A 750ml corked and caged bottle at 3 Fonteinen lambik-O-droom, blend n°30, season 17/18, bottled on 15th March 2018, with a best before date of 26th October 2038. Poured into a 3 Fonteinen ballon glass.
Appearance: A clear ruby purple red colour with a thin pinkish head and nice spotty lacing.
Aroma: Tart, blackberry, black currant and jammy.
Taste: Lightly sour, tart, black currant, blackberry, oak, hints of almond and maybe vanilla.
Mouthfeel: Medium bodied with moderate to soft carbonation.
Overall: Nice wonderful fruitiness with great aroma and flavours.

Other Notes: For this fruit lambic we macerated strawberries (30%) and cherries (70%) separately on two different oak barrels for a couple of few weeks. The fruit lambics were then blended and put on a 400 liter oak barrel for another 6 months of ageing and bottled afterwards. The fruit intensity is 500 grams of fruit per liter of bottled Bio Aardbei + Kriek. 100% 3 Fonteinen lambic. Number of bottles – 582

This 9th version features a range of strawberry maceration iterations aiming at balancing the intense fruitiness of strawberries with the subtleties of traditional lambic while minimising the unpleasant phenolic characteristics of the small pits. For this fruit lambic we macerated strawberries (30%) and cherries (70%) separately on two different oak barrels for a couple of few weeks. The fruit lambics were then blended and put on a 400 liter oak barrel for another 6 months of ageing and bottled afterwards. Intro: A 750ml corked and caged bottle at 3 Fonteinen lambik-O-droom, blend n°86, season 17/18, bottled on 18th October 2018, with a best before date of 26th October 2038. Poured into a 3 Fonteinen ballon glass.
Appearance: A lightly hazy pinkish red orange colour with a thin off white head that had spotty lacing.
Aroma: Tart, strawberry, raspberry, cherry and slightly jammy.
Taste: Sour, tart, strawberry, cherry and raspberry. A little sharp, but not overly so.
Mouthfeel: Light to medium bodied with soft carbonation.
Overall: Looks and smells great. Taste was perhaps a little sharp, but overall still very enjoyable.

Appearance: A lightly hazy orange red colour with a thin off white head that left spotty lacing.
Aroma: Tart, jammy, strawberry, cherry and oak.
Taste: Sour, tart, strawberry, cherry and jammy.
Mouthfeel: Light to medium bodied with soft carbonation.
Overall: Nice jammy fruitiness especially in the aroma. Strawberry in beers generally hasn’t really worked for me, but this one was good.

3 Fonteinen Speling van het Lot I.iii: Nocturne In’t Putteke Van De Nacht | The Darkest Hour

Other Notes: A spontaneously fermented and barrel matured beer following the lambik process, but with stronger dark malts only. Number of bottles – 1338

Brewer Description: (from bottle) Brouwerij 3 Fonteinen “Speling van het Lot” (Twist of Fate) is a series of small batch experimental brews, barrel maturations, fruit macerations and/or blends. Somewhere in March 2015, Armand and Michaël brewed a beer according to the lambic process, but with a total absence of wheat and with a wide variety of malts instead of pale malts only. This beer was then aged on wooden barrels for more than 30 months. Surprisingly, the colour of the resulting spontaneously fermented beers was not the same! While all beers are bottled straight from the barrels, we therefore made 3 different versions: the lightest in colour: Nightfall (I.i), the darkest in colour: The Darkest Hour (I.iii) and the blend of both: The Hour of the Wolf (I.ii). Give this beer the time to open up and to let it evolve in the glass. Taste, savour and experience with the best of friends, old and new.

Intro: A 750ml corked and caged bottle at 3 Fonteinen lambik-O-droom, blend n°48, season 16/17, bottled on 20th September 2017, with a best before date of 26th October 2037. Poured into a 3 Fonteinen ballon glass.
Appearance: A clear dark brown colour with a thin beige head that had big bubbles, but left only sparse lacing.
Aroma: Tart, dark fruit, plum, prunes, raisin and a tinge of honey, syrup, toffee.
Taste: Sour, tart, funk, plum and cherry. Almost Oud Bruin like.
Mouthfeel: Light to medium bodied with soft carbonation.
Overall: Interesting and quite different. Although the lambik process was used, the use of dark malts definitely created something nice and unique. A good experiment.
