Brewer Description: (from bottle) Made with organic pilsner and a variety of speciality grains along with Northwest hop flowers. This beer has been aged in Kentucky rye barrels for at least 3 years. It has mild carbonation with notes of leather, walnuts and chocolate. It also has complexity and wisdom only achieved with time.

Intro: A 12 fl. oz. bottle, 2015 vintage, poured into a snifter glass.
Appearance: Dark brown in colour with pretty much no head and only sparse to no lacing.
Aroma: Dark malt, chocolate, roast, caramel, oak, whiskey, with light notes of vanilla and dark fruit, plum, prunes.
Taste: Moderately sweet, dark malt, roasty, caramel, chocolate, oak, whiskey, light vanilla, dark fruit, grape, plum, prunes, some nutty notes, boozy, with light peppery spice.
Mouthfeel: Medium bodied with soft carbonation.
Overall: Despite it being both sweet and boozy (usually not my thing), it was still an enjoyable sipper.

Brewer Description: (from bottle) Made with organic pilsner, a variety of speciality malts and Northwest grown whole hop flowers. Aged with locally grown cherries in oak barrels for at least 15 months. This beer has no carbonation, but it does have a velvet smooth body and a sweet tartness in the finish.

Intro: A 12 fl. oz. bottle, 2015 vintage, poured into a snifter glass.
Appearance: A dark brown colour with slight purple notes and pretty much no head except for a few bubbles and no lacing.
Aroma: Tarty cherry, mixed berries, roasty malts, chocolate, vanilla, with notes of oak and bourbon.
Taste: Tart and sweet cherry, dark fruit, plum, prunes, honey, bourbon, oak, booze, and a light hint of chocolate and vanilla.
Mouthfeel: Medium bodied with no carbonation (as stated on the bottle).
Overall: It’s a sipper, but maybe on the verge of being too sweet for my palate.

Intro: A 330ml waxed bottle, bottled on 6th March 2018, and with a best before date of 6th March 2023. Poured into a snifter glass.
Appearance: A deep dark copper amber colour with a thin beige head that sticks around while leaving fine spotty lacing.
Aroma: Marzipan, almond flakes, caramel and alcohol.
Taste: Sweet, marzipan, cherry, almond, caramel, brown sugar, syrupy and boozy.
Mouthfeel: Chewy, full bodied with soft carbonation.
Overall: I don’t know, I’m a bit unsure about this one. I’d enjoy one sip and the next sip would be just ok, and I’d keep flipping between the two throughout the whole drink. A strange one for me. After finishing, and much thinking throughout the sipping, I think that the almond was maybe too overpowering, and that it made it taste too pastry like for me.

Brewer Description: (from bottle) Deschutes Brewery and Hair of the Dog Brewing Company bring you another artistic collage of cask-aging alchemy. This encore collaboration delivers notes of vanilla, caramel and molasses with roasted accents and complex malt character.

Intro: A 22 fl oz bottle with a bottled on date of 1st August 2016. Poured into a snifter glass.
Appearance: A clear dark amber brown colour with pretty much no head other than an extremely thin tanned coloured layer that doesn’t even cover it completely and dissipates quickly. Only some sparse lacing.
Aroma: Lots of dark fruits especially raisins, cherry, raspberries, plum and prunes. Following that, there’s roasted malt, caramel, toffee, oak, vanilla, molasses, chocolate and whiskey. The Pinot character seems to come out more as it warms.
Taste: Chocolate and cocoa at the beginning followed by some dark fruit, mainly raisin, cherry and prunes. In the middle there is some red wine coming through before finishing with caramel, toffee, vanilla, oak, molasses and whiskey.
Mouthfeel: Full bodied with light but prickly carbonation and light alcohol warmth.
Overall: This wonderful sipper has complex aromas and taste. It is very well blended as the result is well balanced. Good fruit, malt and barrel character. I already have another bottle to age.
