Intro: An unnecessarily black waxed, capped and corked bottle, cuvee 2020-2021, with a best before date of April 2027. Poured into a Tilquin stemmed glass.
Appearance: A hazy golden orange colour, with a nice fluffy one finger white head that had great retention, and left good lacing.
Aroma: Grape skin, white wine vinous, wood, sherry, light funk, with notes of yellow stone fruit and lemon zest.
Taste: Light to moderate sour, yellow stone fruit, grape skin, vinous, wood, sherry, and a touch of light funky notes.
Mouthfeel: Smooth, medium bodied, with moderate to soft carbonation.
Overall: The wax was unnecessary and just caused a big mess before I even got started. Despite this, the beer drank really well with enjoyable aroma and flavours. Admittedly, a good surprise!

Brewer Description: (from bottle) This is our tribute to the hardworking “arrumbadores” whose labor and skill kept Spain’s historical Sherry bodegas running for centuries. We aged our Danish Wild Ale in Oloroso, Pedro Ximenez and Palo Cortado casks for two years before crafting the final blend. The combination of these Sherry barrels makes for the perfect balance of sweet and dry, and imparts a rich and complex melange of toasted nut, dried fruit and spice flavors to our Danish Wild Ale.

Intro: A 750ml caged and corked bottle, 2021 vintage, bottled on 17th May 2023. Poured into a Tilquin stemmed glass.
Appearance: A lightly hazy golden orange colour, with a one finger white head that had good retention, and left some nice lacing.
Aroma: Funky, sherry, citrus zest, grapefruit notes, and a touch of oak.
Taste: Sherry, funky, grapefruit, notes of dried dark fruit, caramel, a touch nutty, and light spicy bits.
Mouthfeel: Light to medium bodied, with soft carbonation.
Overall: Nice funky and sherry notes but would have preferred a touch more carbonation.

Brewer Description: (from bottle) A Robust beer aged in a cellar for almost two years in a single large sherry barrel from Andalucia. It was brewed with organic malt and hops. It is an homage to an earlier era when the notion of time had a different meaning. A collaboration with my dear friend Jan K. of Hibernata brewing project, with whom I share a mutual love for classic beers and our affinity for delicately rustic beers. Here we present you with Saturn: brewed, fermented and aged as our interpretation of a doppelbock with a truly refined character. The resulting beer has those qualities that are dear to both of us: a delicate vinous character, roundness, elegance, a proud posture and a sense of time and place. Best shared in good company. Intro: A 750ml dark gold waxed bottle, with a best before date of 20th March 2024. Poured into a Tilquin stemmed glass.
Appearance: A nice clear amber copper colour with a big two finger dark beige head that had excellent retention and left lots of nice lacing.
Aroma: Light roast, sweet malty, vinous, red wine, cherry, prunes, with sherry notes.
Taste: Lightly sweet and sour, tart, cherry, red wine vinous, plum, prunes, sherry, toffee, and raisin, with a very light roasty finish.
Mouthfeel: Full bodied with soft carbonation.
Overall: Nice enjoyable vinous and sherry notes.

American Solera Old Dishoom

Intro: A 12.7 fl. oz. bottle, 2016 vintage. Poured into a snifter glass.
Appearance: A clear brownish colour with an orange tinge, and a one finger tanned head that dissipated fairly quickly to a thin layer, while leaving some lacing.
Aroma: Lightly tart, dark fruit, raisin, prunes, plum, fig, red grape, with a hint of wood, caramel and sherry.
Taste: A mix of Flanders Oud Bruin and Old Ale. Lightly tart, with lots of dried dark fruit, raisin, prunes, fig, plum, red grape, with a splash of oak, caramel and sherry.
Mouthfeel: Medium bodied with moderate to soft carbonation.
Overall: Not your traditional Old Ale, but what appears to be some blend of Flanders Oud Bruin and Old Ale, lends itself to a nice enjoyable sipper.
