Brewer Description: (from Untappd) Spontaneous fermented beer aged 1 year in pinot noir cask transferred in “Vinification intégrale” cask. Maceration of 7 months with “Gewurztraminer” grapes from Henri Klee Domaine. Concentration 300g/L.

Intro: A 750ml corked and capped bottle, 2021 vintage, poured into a Tilquin stemmed glass.
Appearance: A nice lightly hazy golden straw orange colour with a half finger white head that dissipated fairly quickly while leaving only sparse lacing.
Aroma: Tart, vinous, white wine grapes, yellow stone fruit, apricot seed, funk, oak, lime, and citrus zest.
Taste: Lightly sour, herbal, green vines, vinous, white wine grapes, grapefruit, lime, with a touch of funk and wood.
Mouthfeel: Light to medium bodied with moderate to soft carbonation.
Overall: It took some time for me to enjoy this, but it grew on me with each sip. I think it was the herbal element that caught me out a bit.

Métaphore x Lajka Mars 2021

Brewer Description: (from bottle) Märzen beer with local organic spelt. Brewed in March and aged in a cellar till October in freshly emptied biodynamic Pinot Noir barrels from Burgundy. Brewed with organic local malt, hops and raw spelt. Homage to those early times, when beers were made in a season for the season and the notion of time had a different meaning. A collaboration with dear friend Jan K. of Pivovar Lajka with whom we share the mutual love for the classic and rustic beers. Here we present you with Mars. The resulting beer is the reflection of the love of both brewers for classic beers and their affinity for delicately rustic beers. Not quite Märzen, not quite Bière de Garde. This malty little rustic beer with a sense of time and place is ready for you to enjoy here and now.

Intro: A 750ml bottle, with a best before date of 1st November 2022. Poured into a Lost Abbey teku glass.
Appearance: A clear dark copper amber colour with a two finger white head that had excellent retention and left lots of nice lacing.
Aroma: Sweet malty, caramel, apple, red wine grapes, and wood.
Taste: Sweet malt, bready, caramel, plums, with light vinous notes.
Mouthfeel: Light to medium bodied with moderate carbonation.
Overall: Easy drinking with the Pinot Noir barrels making an interesting impact on the aroma and flavours.

Unfiltered, open-fermented & barrel-aged.

Intro: A 375ml corked and caged bottle, bottled on 28th June 2019. Poured into a 3 Fonteinen stemmed glass.
Appearance: A lightly hazy dark amber copper colour, with a thin khaki head that dissipated quickly to a ring around the glass, while leaving some lacing.
Aroma: Light tartness, grape, dark fruit, plum, cherry, honey, oak, vanilla, and a splash of lime zest.
Taste: Tart, lightly sour, grape, lightly vinous, caramel malt, lemon juice, honey, oak, with light rye spiciness on the finish.
Mouthfeel: Medium bodied with soft carbonation.
Overall: Enjoyable, but carbonation was a little light for my liking.

8 Wired Snake Charmer

Brewer Description: (from bottle) A sour ale brewed the traditional way. Aged in Pinot Noir barrels for two years with Blackcurrants and a bunch of microbes, creating a complex melange of funk, fruit and tartness.

Intro: A 500ml bottle, 2017 vintage, with a best before date of 19th February 2026. Poured into a 3 Fonteinen stemmed glass.
Appearance: A clear reddish orange colour with an almost three finger slightly off white head that dissipated fairly quickly and left only sparse to no lacing.
Aroma: Lightly tart, blackcurrant, Ribena, oak, vanilla and funk.
Taste: Pretty much exactly what you get in the aroma, sour and tart, blackcurrant, Ribena, mixed berries, oak, vanilla and funk.
Mouthfeel: Medium bodied with spritzy moderate to high carbonation.
Overall: Great fruit flavours with strong barrel character. Just really good to drink.

8 Wired Grand Cru 2011

Other Notes: 2011 vintage. Pinot Noir barrel aged Strong Ale. Brewed with sultanas and funk

Brewer Description: (from bottle) This beer has been made with a little more love, care and attention than most other beers. After brewing this Belgian-inspired ale with a large dose of sultanas, we aged it in Pinot Noir barrels for more than a year. The barrel aging has added some funky sourness to an already very fruity beer, thanks to native micro flora left behind in the wood. If I should describe this beer with one word, it would be “vinous”. In fact, this may be the most wine-like beer I’ve ever tasted. So, maybe calling it “Grand Cru” – a classic wine descriptor – isn’t as preposterous as some wine snobs might claim it to be?

Intro: A 375ml bottle, 2011 vintage, and poured into a Chimay goblet.
Appearance: A cloudy dark rusty red brown colour with a just over one finger tanned head that dissipates slowly to a thin replenishing layer while leaving nice curtain lacing.
Aroma: Red wine, grape and raisin with hints of vinegar and tart cherry.
Taste: Tart and sour cherry, vinegar, lots of dark fruit, grape, plum and raisins, vinous red wine with hints of chocolate and a light black coffee bitterness on the finish.
Mouthfeel: Medium to full bodied with moderate carbonation.
Overall: This was pretty good and definitely complex. However, lately I’ve tried quite a few wine barrel aged beers, and I’m thinking that perhaps it’s not my thing in that I don’t feel wine barrels add anything better to the base beer. It’s solid, but perhaps not “Grand Cru”.
