Russian River Consecration

Brewer Description: (from bottle) con.se.cra.tion, n 1. The act of dedication to the service & worship of a deity. 2. The act of giving the sacramental character to the Eucharistic elements of bread and wine. When we made the Toronado’s 20th Anniversary Ale, we had no idea that it would turn out to be one of our favorite barrel aged beers we would ever make. With that said, we have always wanted to make a dark barrel aged beer using 100% Cabernet Sauvignon barrels, but, we never were inspired. That is, until we blended five different beers to make the Toronado beer, the tobacco character from the dark malts blended nicely with the fruit character that developed in blending. So, with Consecration we set out to make a barrel beer using all Cabernet Sauvignon barrels. Now, we are not saying this is a replica of the T-rooms anniversary beer, after all, a beer like that can never be duplicated, and, there was no fruit added to that beer as there is with this one. All we are saying is that it gave us great inspiration to brew Consecration. Consecration is refermented in this bottle to create its carbonation- a process commonly used to make fine Champagne and sparkling wine. Spent yeast forms a thin layer of sediment in the bottle, adding yet another layer of complexity and flavors. Pour slowly as to allow the natural yeast sediment to remain in the bottle.

Intro: A 375ml corked and caged bottle, bottled on 4th April 2016, poured into a Cantillon ballon glass.
Appearance: A dark reddish brown colour with a two finger light tan head that dissipated quickly while leaving only slight lacing.
Aroma: Lots of oak, cherry, blackcurrant, grape and red wine.
Taste: Sweet-ish blackcurrant and cherries followed by sourness, oak, red wine, vinegar and light funk.
Mouthfeel: Light to medium bodied with moderate to high carbonation.
Overall: This was just like drinking red wine with carbonation. There was no sign of the 10% ABV, and although I thought the aroma was better than the taste, both were still good.

Intro: A 750ml bottle, batch #315, bottled on 2nd May 2016. Poured into a Lost Abbey teku glass.
Appearance: Dark dark brown in colour with an almost two finger dark mocha head that had pretty good retention and left some lacing.
Aroma: Dark roast coffee, dark fruit plum and raisins, molasses and dark chocolate.
Taste: Dark fruited chocolate, cherry and plum sweetness, molasses, booze. Only light coffee notes along with hints of caramel.
Mouthfeel: Smooth, medium to full bodied with light carbonation and a hint of alcohol.
Overall: The coffee flavours were not as strong as I would have expected. To be fair, it has been almost one year since bottling, but there are many examples of Coffee Stouts, where the coffee has held up really well. Having said that, this bottle is still tasty and really easy to drink, and whereas some Imperial Stouts I can sip for hours, I have pretty much finished this 750ml bottle in less than an hour, which is really fast for me, for a beer with double digit ABV%.

Reninge Bitter Blond à Lambiek

Style: Euro Sour Ale

Brewer Description: (from bottle paper wrap) High fermentation beer with a positive taste evolution because of the refermentation in the bottle. Handcraft beer based on natural ingredients: water, barley, malt, hop from Poperinge (40%), live yeast and lambic. This beer is brewed using three different flavours of bitter hop and has unmistakable fresh taste. After the main fermentation, this beer is blended with Lambic and matures for eight months in the bottle. Unfiltered and unpasteurised. Preserve this beer upright in a cool and dark place, preferably with a steady temperature of 4-6°C. Pour out slowly in a dry and neat glass.

Intro: A 375ml paper wrapped, corked and caged bottle, bottled on 11th November 2013 and a statement that says it preserves up to 4 years after bottling. Poured into a Lost Abbey teku.
Appearance: A hazy copper orange colour with a one finger white head that dissipated fairly quickly, while leaving sparse lacing.
Aroma: Tart citrus tangerine, funk, earthiness, oak and a herbal element.
Taste: There’s a light sweetness, followed by some bitter orange rind, sour lemon juice and a mix of dusty, funky and herbal elements.
Mouthfeel: Medium bodied with moderate carbonation.
Overall: This was ok with interesting sweet, bitter and sour, but I wasn’t too fond of the herbal aspects that were there.

American Solera Foeder Cerise

Intro: A 375ml bottle, 2015 vintage as per the date on the back label. Poured into a Lost Abbey teku.
Appearance: A hazy orange-red colour with a less than two finger off white head that dissipated fairly quickly and left only sparse lacing.
Aroma: Tart cherries and oak with hints of lemon and funk.
Taste: Tart and sour cherries with a touch of oak and marzipan almond-like flavours on the front end. The finish has a nice lemon and vinegary sourness.
Mouthfeel: Light to medium bodied with moderate to high carbonation.
Overall: A nice and refreshing Wild Ale with great tart cherry notes.

Appearance: A hazy golden orange colour with a one finger white head that disappears extremely fast and no lacing.
Aroma: Citrus mandarin and lemon with some tropical mango and pineapple here and there, in addition to oak and light funk.
Taste: Sour and tart, citrusy sour orange and lemon with hints of oak and funk.
Mouthfeel: Crisp, refreshing, medium to light bodied with moderate to high carbonation.
Overall: This was nice refreshing and easy to drink.
